S'mores Icebox Cake Review

So, I was just scrolling through my Facebook feed the other day and in between the political madness and cat posts, I saw this magical dessert! I don't know about you, but I am a huge S'mores lover. I really love marshmallows a lot! Any recipe that has marshmallows in it is something I will have to make. This little piece of heaven literally melted in my mouth. I highly suggest making it!

I posted the video that I used as a reference at the bottom of this post. Now I say reference because I almost never follow a recipe exactly. If you are interested in making it here is the ingredient list...

Ingredients:
-a box of graham crackers
-mini marshmallows
-Fluff (big tub of gooey heaven!)
-chocolate morsels 
-heavy whipping cream 


I pretty much followed the directions in the video, except I added a little powdered sugar and splash of vanilla while I was mixing the heavy cream, it came out a littler thicker this way. I also left my version in the oven to broil a little longer because I like my marshmallows a little more on the burnt side. It reminds me of camping! It came out really delicious and I highly recommend making it! I love that you don't have to actually bake it. And a fair warning, you won't be able to have just one piece! It's also a tad bit on the messy side. This cake didn't last a day, so I guess I will be making it again!

Currently - Fall Edition

Current Mood: Motivated

What a change!? I'm usually super un-motivated, but lately I have been in a let's-get-shit-done mood. In fact I have been replacing a lot of stuff around the house slowly. That picture above is my new door mat. The old one I had was really old! It saw me through 2 marriages in fact, and I felt that after I had spilled coffee all over it, that it was time to go. This new door mat is much more colorful and welcoming. My daughter loves it too! I've also replaced all my silverware and dishes. I mean why not?

Current Procrastination: Student Loans

Can I just say yuck. Good news is I do not have to pay them back anytime soon. The yuck part is all the paperwork. I have to go in and re-do my deferment, but I'm really glad that I can still do that for the time being. Bills are so stressful as it is. I'm just glad I can put this one off until I have my car paid off. 



Current Hair: Black and Greenish Teal

First let me apologize for all hair and lint on my dress! Ha! I am a real person and at the time had no idea all that was on there. To be honest I didn't feel like photoshopping it out either. Anyway, my hair is still 2 colors. I have it thrown up in a messy bun, which has been the hair-do of choice as of late. it's still half black and fades into a greenish teal color. Which you can see more clear in this post HERE.



Current Movie: Blade Runner 2049

If you haven't seen the original Blade Runner I highly suggest watching it before you see the new movie. There's also a book. One thing to keep in mind though is that it was made when special effects were lacking a little, so it's kind of cheesey, but the new movie is super awesome! A group of my friends and I got togther and watched the old version first and then we all went opeing night for 2049, which was last weekend, to see it! It's worth the watch, though I am kind of bias because I'm a huge Harrison Ford fan.

Current Fandom: Star Wars & Stranger Things

I am Star Wars obsessed! Yet, I do leave room for other fandoms. Right now Mary and I are re-watching Stanger Things for it's next season premiere. I can't tell you how excited I am!! Our friends will be hosting a Stranger Things marathon at their home and you know I will be spending the night to binge watch it! Joyce is one of my favorite characters, probably because I can relate to her a little too much. I also can't wait to see Eleven!



Current Truth: Weight

Like I mentioned in my last post, I'm on a weight loss journey. I have good days, and I have bad days. I try to capture pictures on my good days. People really dont understand the strife mental illness can cause, especially when it comes to eating healthy and staying at a healthy weight. Slowly but surly I'm getting there. I was almost 170 about 10 months ago on my small 5ft frame. I'm now around 147 with a goal weight of 135.Maybe even more later, but not bad so far. 

Current Book: Poetry by Pavana Reddy

I have so many books in my collection that I need to read, but I discovered some new poetry! Pavana Reddy is a writer who I feel is basically writing everything I feel. She has published a book of poetry and I want it! It helps me to read like-minded writers work to keep me focused and motivated, and she is one of them. I have a second book of poetry in the works and I want to finish and have it published by the end of this year. It's going to be much longer than my first, which you find here on Amazon.



Current Obsession: Strawberry Crush Soda

Okay, I just want to say that I never drink soda, especially since I have been trying to eat more healthy. But who can resist a cold fizzy drink flavored like a popsicle from my childhood! Not this girl! I was inncocently walking through my local grocery store and this little 4-pack of bottled heaven jumped right into my shopping cart! I didn't even notice when it made it through the checkout into my fridge! I wan't about to let it go to waste...HA!



Current Love: Flowers

Flowers, flowers, flowers! I always have a vase of fresh flowers on my dining table whether they are store bought or wildflowers from my beautiful yard. These flowers are mums and they are on a small bench in the back of my house. I also have another pot of these with burnt orange ones at my front door along with pumpkins.I have potted plants indoor that sprout flowers too. I am a sucker for some pretty flowers!

Currently Looking Forward To: Halloween! 

Can you believe that Halloween is right around the corner?! I feel like it totally crept up on us! Halloween is one of my favorite holidays for so many reasons. First of all because Fall is my favorite season! I love pumpkin spice everything (yes I'm that person) I have no shame! You'll catch me making pumpkin spice chocolate chip bread in the spring. I pretty much just love pumpkin. 2nd is all the fun decoartions! This holiday lets you have fun with things that you normally wouldn't want around your house, like spider webs! Not to mention all the costumes too! Such a super fun holiday!



I hope everyone out there is having a beautiful Fall season! The picture of the trees above are pretty much what it looks like everywhere here in Vermont. I feel like it has been very windy though, which means our peak season was short lived. A lot of our beautiful leaves are now on the ground. This will start our "stick season" which is the precursor to winter! Oh boy!

My Weight Loss Journey

Let me start off with saying that this is a very difficult post for me. I can't even tell you how many times I have written this post in my head and thought no, that's too graphic. So bare with me as I try to explain this the best I can.

After that first paragraph you might be asking yourself, what's the big deal? OR where are the helpful hints? Well there aren't any helpful hints to be honest, in fact my weight loss journey is far from average for quite a few reasons. As I write this post I'm at about 15 lbs lost. Some pounds on purpose and some just because I've been more active. This weight loss has been very gradual only because I'm very fragile when I'm trying to lose weight. 

Back in 2002 I saw a psychiatrist, nutritionist, and went through a lot of therapy. In fact, going to therapy was like my job then since I went 4 times a week. One of the things we figured out was that my weight gain at that time was "protection" weight. I was almost 180lbs on a small 5 ft frame. It was also around the time when I had my two children. Fast forward 15 years and I'm still here struggling with my weight and body image, amongst other things.

My ultimate plan is to lose 20lbs more which would be 35lbs total. I think that is a reasonable amount. I am currently in a state where I want to binge eat so bad! Like, I could sit down and eat an entire cake if I were given the chance. The only reason I won't is because type 2 diabetes runs in the family. I want to be around for my grandchildren and great grandchildren. 

This picture is the most recent I have after I got a tattoo. I'm genuinely happy here.


Another part of my weight loss journey, that is a challenge, is my battle with Body Dysmorphia Disorder. This disorder has been the bane of my existence and not something I like to admit having. There are moments where I get so obsessed with how I look that I will either not go anywhere, or throw clothes away, or sit and cry because of the anxiety it causes. I can't even tell you how many times I left the doctors office with nothing wrong with except the fact that my mind is constantly trying to torture me. With that said, this disorder can be a nightmare when trying to lose weight. The reason is because any slight variation to the way my body changes can either be for the better, or worse. This disorder also plays a huge part in my panic disorder but that's a whole other blog post.

I do allow myself to have plenty of cheat days but even these can throw me off. I start to see my mid-section reduce in size but it's like the smell of a donut can cause it to bulge all over again. I'm super lucky to have a great support system. My little family is great, except when they complain there's no food, which is code for junk food. I try not buy certain foods so I'm not tempted to eat it!   

Anyway, I'm giving myself a year to lose the next 20lbs. So I can slowly get used to the physical change. If I slip up, it's going to make me crazy but it's not the end of the world.

Outfit Diary - Pretty In Pink

It's been absolutely beautiful here in Vermont! A lot of the trees are changing and you can feel Fall in the air. I will hopefully get some pictures of the mountains on here because they are too beautigul to not share! It's been really nice to still be outside enjoying the sunshine.

As for this outfit, it's a simple one. Just a pink dress I got from Target, paired with a thrifted grey sweater, and a pair of chucks. I really don't think there is much more I can say about it?

My daughter was the one taking the pictures today, and I can't remeber why I was laughing so hard? She was probably saying something silly because she hates when I look serious. She's one of my favorite photographers! It's never a dull moment when we are together and we always manage to have a lot of fun.

My Little Farm House

This is our new house! Before I go into details I just want to say that this summer has been insane!! We have been traveling a lot and just enjoying life and forgetting to take pictures. I'm also to a point where I'm trying to take pictures so I have lots of memories to look back on, but I just don't feel like every moment needs to be on social media. But that's just me.

I know I haven't been blogging as much as I wanted to this year, but thank you for hanging in there! I have been going through a lot emotionally, booth good and bad, so it's been hard to sit down at my computer and blog, write, or even do photography. But things are getting better!

Anyway! This is our little farmhouse. We have only lived here a month and have been working really hard to make it our home. Lots of painting and repairs! We have also been up-cycling some of our furniture. We are on about 4 acres of land and it's beautiful. The house has 3 bedrooms, 2 full baths and a 2 car garage. I can't even tell you how nice it is to have so much more space! There is still a lot of work that I would like to do, especially some landscaping, but I'm going to wait until next spring before I start anymore huge projects. There's still a lot of painting that needs to be done too! Like the pink trimming needs to go! Ha!

So this is our progress thus far and I'll try to post more pictures once we have more accomplished! Though I think in the short amount of time of us being here we have gotten a lot done.

Noctuary - Published!

I finally did a thing! Ha, ha! I'm not sure if I have mentioned it here on the Blog, but I have been writing a couple books now for what seems like forever. This little collection was put together in a matter of days because I already had the poems in hand and I thought, why not? Why not publish my insides for all to see? Anyway, yes this a small little collection of some poems and diary entries spanning over a decade. It's very difficult for me to share any of my work for many reasons, one of them being vulnerability. I wrote some of these in my darkest times, when I felt alone and trapped in my own mind. Never in my wildest dreams would I ever think they would be available on Amazon and Kindle to Purchase [insert uncontrollable introvert laughter here] but I did it and I'm super proud of myself. The kindle version has had a lot of downloads since I published it, which was pretty surprising for me. 

As far as the name of the book, I thought Noctuary was appropriate since I do all my writing at night. The Websters definition of Noctuary is: a journal of nocturnal incidents or a journal of what happens in the night. I know other authors have used this word relating to horror fiction, but if I'm being completely honest with myself, these poems were written at night when I was most vulnerable, some even after I had nightmares/night terrors, some with tears streaming down my face. Writing helps ease my anxiety and panic attacks, it always has. These are a sum of my thoughts during those periods when I needed someone to just listen.

My other work is well on it's way too. I'm also planning on publishing another book of poetry that will also have art included. This one will probably have about 200 poems, but that's not written in stone yet, no pun intended...well maybe slightly intended. The manuscript for my sci-fi book is still underway...and I totally feel like I'm going to be pulling a Tolkien on this one. I do want to take my time and make sure it's perfect, hopefully without plot holes and such. I will also be submitting this professionally through to publishers. Which I know will be an interesting journey! I'm already prepared for rejections, but I refuse to give up on my dreams.

My Disney Side

I'm not sure if I have ever mentioned it here, but I am a HUGE  Disney fan! In fact the very first movie that I saw in a movie theater (that I can remember!) was The Little Mermaid. I fell in love and never looked back. I had to watch everything Disney! I was relentless. When I was little you could always find me impatiently waiting to watch the Mickey Mouse Club on TV. Even the older black and white version! 

Here we have a tribute to my 9th birthday. It was 1990. I'm sporting my stylish Minnie Mouse shirt.

Oh my! Was I a dorky kid or what?! Who gives themselves bunny ears?? I should try to re-create this picture...but anyways. As I grew, my love for all things Disney grew. Anytime a Disney movie came out in theaters I had to go. Once I was old enough to go to Disneyland with just my friends, you bet I had a year pass with the least amount of black-out days! 

Here we have myself  and my best friend Jamie. It's 1995 and Toon Town was brand new!


Look how cute 'gansta' Eeka is! HA! Funny thing though, I did end up in Disney jail once, but we can talk about that another time! Moving on....

That list is always changing I feel. And don't get me wrong I pretty much love them all! I know Star Wars is now apart of Disney now, but it will always be a separate category to me. Though it is very exciting to have two of my favorite fandoms merge. 

My very first favorite Disney Princess was Ariel. We have a lot in common, except I'm not a mermaid, or a princess, or married to a prince...ha ha! Okay so maybe just the part about being raised by her dad and having a yearning to be in a world that is different from the one I was in. I never felt like I fit in. I still don't! I loved that she wasn't afraid to do what she needed to do to be with the one she was in love with, though as an adult when I look at it now, I'm like wow that's a weird story! I also read the original Hans Christian Andersen tale, and that's even worse!

Fast forward to today and Tangled has become my favorite! Moana is right behind. Rapunzel and I have so much in common! Except I wasn't kidnapped as a child, and I'm not a Princess, nor did I grow up in a tower! I did have a lizard as a pet, befriended a bunch of rough-ians, and been on more adventures than I can count! Unfortunately my hair does not have magical properties, though It's been many magical colors!

Hola! Super nerdy outfit post here and wow I took a little bit of a break there! If I'm being completely honest I needed it! I have this really bad habit of piling a lot on my plate. I've also been working on my anxiety and Panic Disorder. In fact the other day I ran all of our errands alone, which is a really big deal for me, though I did end up with a bad anxiety attack after. Aside from that I've noticed that keeping myself busy and working with my hands helps a lot! I've been painting, writing, and sewing! The skirt you see here took me about 3 hours to make (it was my first skirt) and was really easy to make! It feels so satisfying making my own clothes, and all the money I'm saving in the process. Plus I feel like I have a strange shape and this way I'm able to have the perfect fit with comfort too.

I have also been on this kick where I feel that all clothing should have pockets, and when I made this skirt pockets were the first thing that came to mind. The pockets ended up being my favorite part! Unfortunately when I made the skirt I used my hand for measuring when I should have used my IPhone! I have the IPhone 7 plus and it doesn't fit. The next skirt I make I will make sure it fits.

Another fun thing I'm wearing is my new badge for the 501st Legion. I got it for when I'm not in my Jawa robes and when I'm wrangling. I think it's cool that it also has my PR Officer title. I help out with The New England Garrison's social media, which is a lot of fun!

And did you notice my hair? Can I say that gray hair is the hardest color I have ever tried to achieve? Because it is! My poor hairdresser had the hardest time trying to lighten it and I just recently re-toned it. Overall I love though! Have you ever had a hard time achieving a specific color?

I had a lot of fun taking pictures for this, as you can probably tell. My awesome fiance Mary was taking all the pics and my daughter was there too making me laugh. I love them so much.
