Vegetarian Mini Taco Cups


Ingredients:
1 can vegetarian refried beans
1 can kidney beans (optional)
24 won ton wraps (makes 12 taco cups)
Shredded cheese (your choice!) I used a Colby Jack blend 
And whatever other toppings you like!
I added lettuce, tomato, avocado , jalapeƱos and Cholula sauce as toppings. I also made Spanish rice as a side dish.

Step one: preheat oven at 350
Then spray your cupcake pan with non-stick spray.
Next place won ton wraps in pan. I layered two each.
I mixed my refried beans with kidney beans just to add a little more texture.
Scoop a heaping tablespoon into each won ton and too with cheese!
I had mine in the oven for about ten minutes or when the won ton corners looked golden brown.
Here's my Spanish rice..but that's a family secret!
I always have to eat avocados!

This was enough food for four, though my teenage son is like a bottomless pit! I almost had to make a whole separate tray for him! It was amazing too because my kids don't normally like beans, but they devoured these :)
I hope you guys try this recipe! It was such an easy dinner, it only took about 20 minutes. The rice is what took the longest to cook. I originally saw this recipe somewhere on Pinterest, but I never re-pinned it, so I just winged it! Enjoy!
